Its cheese crumbles are used over refried beans, salads, sopes, gorditas and pambasos. Cotija (pronounced ko-TEE-hah) is like the Mexican parmesan cheese, it is also called Queso Añejo Mexicano. Cotija Cheese is white, salty and granular, also similar in flavor to Feta Cheese, it softens but does not melt when heated. Cotija, Michoacan, is a town in Mexico where the name originated. This is no Monteray Jack Cheese

Queso Cotija Cheese is delicious, mild, smooth, with a little bit of a chew to it. I know people substitute Jack cheese for this, but it is simply not the same. It brings to mind the fresh "cheese curds" popular in Wisconsin. Absolutely delicious in salads

  • Unique flavor and texture make this a fabulous addition to any dish
Cons
  • Again, it is difficult to find, and it is a chilled item, so it had to be shipped to Hawaii with "blue ice" in a cooler sack. It arrived room temperature, but still flawless
