An agitated restaurant patron in Saratoga Springs, New York kept repeatedly sending back his order of fried potatoes because they were bland, thick and soggy. In response to the agitated and complaining customer, the cook George Crum decided to slice the potatoes as thin as he could, fried them until crisp and seasoned them with salt. To Crum’s surprise the customer loved these new chips that became what we know today as the famous potato chips. They rapidly became popular and were added to the menu under the name of Saratoga Chips. Soon after Crum left the Moon Lake Inn where he worked at and opened a new restaurant called “The Crumbs House” where he placed a basket of his famous Saratoga Chips on every table. This gave a hug boost of popularity to his signature potato chips that spread rapidly through the East Coast of the U.S.
The first chips were sold in grocery stores in 1895 and were sold in tins or scooped from glass display cases. It wasn’t until 1926 that potato chips were sold to customers in paper sacks. It was Laura Scudder who came up with this innovative idea through her family’s potato chip business in California where take home sheets of waxed paper were ironed into the form of bags. The bags were later filled with chips and sealed with a warm iron ready to be delivered to retailers. Today potato chips are packaged differently using plastic bag with nitrogen glass blow in before being sealed; this guarantees a longer shelf life and protects the chips from crushing.
