Queso Oaxaca marca El Mexicano

El queso Oaxaca para derretir y hacer quesadillas marca El Mexicano esta hecho en California por Marquez Brothers con la receta autentica de la fabricación de quesos Mexicanos, tal y como se hace tradicionalmente en Oaxaca. Queso doble crema Oaxaca.

Se dice que el nombre de queso Oaxaca empezó en Etla, Oaxaca México, se trata de la elaboración de un queso de leche entera de vaca similar al queso mozarella, que también se le denomina queso de pasta hilada que hace hebras. En su preparación se utilizan 10 litros de leche de vaca entera para obtener un 1 kilo de queso Oaxaca o quesillo. Se calienta la leche de tal forma que transforme la lactosa (azúcar de la leche) en acido láctico, esto es lo que le se llama fermentación obteniendo las bacterias del ácido láctico que es lo que hacen que el producto sepa un poco agrio o ácido. A esta masa o pasta correosa se le agrega el cuajo (encimas) para que al cuajarse la leche se haga una especie de gelatina o gel que se deja en reposo, se corta y se le agrega agua caliente para que elimine el suero. Esta masa que ya es casi un queso, se estira y estira agregándole agua fría y sal hasta formar una tira larga que se empieza a enredar como una bola de estambre y formar así el tradicional y genuino queso Oaxaca.

El queso Oaxaca es ideal para hacer quesadillas y derretirse, solo requiere una tortilla caliente, unos trozos de queso y claro un poco de salsa Mexicana. La tradicional y sabrosa quesadilla de queso se puede comer con tortilla de maíz o tortilla de harina.

This cheese was good, well packed, and arrived very quickly. I have been trying to find Oaxaca cheese for 4 years in upsate New York and I am so glad to find mexgrocer. Very pleased with the cheese and mexgrocer.

The cheese iteself was good. It had the proper characteristics of Queso Oaxaca. My only complaint was in the flavor of the cheese. While it wasn't a bad flavor, it just didn't have the same flavor that I'm used to when visiting Mexico and purchasing the cheese there. I must say though that living in Pennsylvania, I was suprised that the cheese arrived cold and was fresh after its long journey from California.

this cheese is IMPOSSIBLE to find in upstate new york, however, it is used at our favorite (and pretty much ONLY) mexican restaurant here in rochester on their HOLY MOLE appetizer...a plate of chips with a "secret", smooth, mexican cheese melted on top & served with guacamole. when asked what the cheese was they wouldn't tell us, saying "it's mozzarella" which it is NOT! i have been trying to figure out what it is for years and finally found it here! it's a little different than the restaurants but VERY CLOSE!
