Once fully aged and developed, Los Altos Queso Cotija is then covered with a special coating of spices and chili which give it a distinctively red and spicy coating. This cheese is salty and sharp with undertones of pepper, clove and chipotle. Sure to please any avid chili lover, this cheese is best used on any dish that needs that extra flavor component of spice and chili.

It's ok....

It's OK but I was really looking for that hard dry cheese with that sharp taste.. this one is more like queso fresco...

Best Queso

This cheese is the best. As close as I can get to queso enchilado. My uses are just nice slices on a pan and cook it and make a cheese taco, shredded on top of enchiladas, frijoles, y con picaditas. Lo juro que Este queso es lo mejor. It reminds me of home, Cuernavaca.

Spicy, but just right

If you like Cotija, you are going to like Cotija Enchilado even better! It's got shilli pepers and other spices, but isn't to hot. It also adds color to your dishes, making them look attractive and opening your appetite. Sometimes I use it to garnish a dish, but I also use it for stuffing chiles rellenos. It tastes great!
