Tamales Cookbook by Mark Miller, Stephan Pyles, and John Sedlar
The Best Tamale Mexican Cookbook. Mexican recipes.
An entire book dedicated to the tamale, this beautiful cookbook is a joy to look at, let alone cook with. It begins with a basic history of the tamale and instructions for their stuffing, wrapping and cooking. It then offers a huge variety of recipes for what you may have previously thought a one-dimensional dish. There are a dozen recipes for tamale dough alone, and the fillings range from the savory vegetarian, meat and seafood versions to sweet and fruit-filled desserts. The photos are fit for framing, depicting dishes like the "Carmelized Onion Tamales with Tomato-Basil Salad" and "Carnitas Tamales with Pineapple and Tomato-Habanero Sauce". Finish off a meal with "Sweet Pumpkin Tamales with Nutmeg Creme Anglaise".
PRODUCT REVIEWS
As far as the cookbook portion, it will never be considered a basic tamale cookbook. While the recipes are very complex - the result is amazing flavors, colors and aromas. In my opinion it's worth the time and effort to follow the lengthy ingredient list and cooking instructions.
- Great stories of the traditions
- Creative recipes
- Amazing flavors
- There are no basic instructions, every recipe is built on layers and layers of flavor
- There is a lot of flipping back and forth, as each recipe refers to many other recipes or techniques to complete (I think it's worth it, but for a casual cook it would be too much)
