Orange, jicama and cilantro salad
Chile piquin is a very small red chile that is very popular in
Mexico to sprinkle it over fruits and veggies. Also can be found whole.

Ingredients
For the salad:16 seedless oranges2 red onions, finely chopped1 large jicama, finely chopped1 1/2 cups of cilantroSalt to tasteChile piquin or any very hot red dried chile.
For the garnish:1 cup of cilantro leaves1 red onion, thinly sliced
Directions
1.- Peel the oranges, and thinly slice cross wide into rounds. Place half the slices on a platter. Layer half onion, half the jicama and half the cilantro on the orange, 2.- Repeat layer of orange, onion, jicama and cilantro . 3.- Season with salt and chile. 4.- Garnish with cilantro o leaves and onion. 5.- Refrigerate for two hours
