Dried Pasilla - Ancho Chile Pods chile peppers or dried chili peppers, also called poblano and pasilla dried pepper. Great to prepare Tortilla soup. Chilipods.

PASILLA CHILES

The Pasilla is similar to a dried Ancho Chile. Pasilla, Spanish for "little raisin", have a thin flesh with some grape/berry flavors and herbaceous tones. Used in mole sauces as well as seafood sauces and casseroles.
Its a mild heat flavor!!
In the US its also called Ancho Chile.

Good Peppers even if your looking for Ancho

Basically the same pepper, it is an essential ingredient to the pepper sauce I make for my tamales.

  • Good taste and flavor without a lot of heat.
Cons
  • Can make my red pepper sauce for tamales very dark...still helps with the taste though.

The best for Chili

I find these chilies make the best chili sauce base for Chili (Texacan, California, etc). Slow cooked and maserated, it makes a smooth flavorfull Chili base. You can then add whatever ingredients you like to make your own Chili. These pods are so much better than anything you get out of a can and has a fuller, richer flavor than other chili pods. California chilies, although mild, tend to be too thin and don't give the same results as the Pasilla chilli. Also Pasilla chilies tend to be hard to find in Florida.

The first thing I look for in a dried chili is that they are still pliable, not completley dried out. These were perfect. Roasted for 5 mins @300, cooled and ground made a perfect chili powder.

We where very pleased with the Ancho Dried Chiles. They where very high quality, visually appealing(nice dark red with no imperfections) with a wonderful aroma. They had a very Nice rich flavor in the Pork Chile that we made.
