TORTILLAS
Either corn or flour, a thin pancake-like bread that is the basis of most Mexican dishes.

TOSTADAS
A fried tortilla served flat and topped with a variety of mixtures: beans, avocado, cheese, lettuce, tomatoes, salsa, etc.

TOTOPOS
A fried tortilla, cut in pieces, usually corn and topped with salad ingredients.

ENCHILADAS
A tortilla, usually corn, filled with cheese, meat, or chicken and rolled or stacked in layers.

CHILAQUILES
Fried tortilla pieces topped with mild red sauce and cheese. Served as an appetizer or for breakfast.

CHIMICHANGAS
Deep-fried flour tortilla, meat-filled burrito.

PAPADZULES
Dish from Yucatan of soft, rolled corn tortillas filled with varying ingredients and topped with pepitas (pumpkin seeds) and tomato sauce.
