Turkey Veggie Melt Recipe

Ingredients
4 Fajita Size Flour Tortillas1/2 cup fat free Cheddar Cheese shredded4 tsp. low calorie Mayonnaise6 oz. low fat cooked Turkey sliced1 medium Green Bell Pepper thinly sliced into rings1 small Red Onion thinly sliced into rings1/2 large Cucumber thinly sliced2 medium Tomatoes sliced
Directions
1. Preheat oven to 400 degrees F. Spray both sides of tortillas lightly with cooking spray and place side by side on a sheet pan. Bake until lightly golden and crisp, about 12 minutes.
2. Spread 1 teaspoon mayonnaise on each tortilla.
3. Place turkey, bell peppers, red onion, cucumber and tomato on top of tortillas. Sprinkle each with cheese and broil for 3 to 5 minutes or until cheese is melted.
