Ingredients
1 ( 16 oz.) Sour Cream divided2 cups Cooked Turkey or Chicken chopped1 pkg. (8 oz.) Shredded Colby and Monterey Jack Cheese divided1 (16 oz.) jar Salsa divided10 Flour Tortillas Soft Taco Size
Directions
1. Mix 1 cup sour cream, chicken, 1 cup cheese and 1/4 cup salsa.
2. Spoon about 1/4 cup chicken mixture down center of each tortilla; roll up. Place seam-side down in 13 x 9 inch baking dish. Top with remaining salsa; cover.
3. Bake at 350 degrees for 30 minutes. Sprinkle with remaining cheese. Bake 5 minutes or until cheese is melted. Top with remaining 1 cup sour cream. Sprinkle with chopped tomato, if desired.

Enchilada Roll-Ups

These rolls ups are great for a quick week night meal. I used turkey, and Safeway Select Salsa (medium). I served a green salad on the side. It’s a great basic recipe to take and run with. Next time I will add a can of chilies, and pepper flakes.......and maybe some black olives.
Pros
- You can cook turkey or chicken ahead of time and freeze. The other ingredients I usually have in the house.
