New Mexico Ground Chile is made by grinding dried New Mexico chiles with both seeds and pod. New Mexico Chiles are the elongated, dried form of the Anaheim chile, only they are more flavorful and hotter. The chile is deep redish-brown or bright scarlet in color, tapered and has a clear, earthy sweet mellow earthy flavor, a mild and a little sagey aroma with tones of dried wild cherries and subtle spicy heat. New Mexico chiles are also known as California chile or Chile Colorado.
