Step 1: Prepare the Tortillas
Cut the tortillas into wedges (quarters or eighths, depending on size). Fry the tortilla wedges in a skillet with a small amount of oil over medium heat until they are crispy and golden. Alternatively, you can bake them in the oven until crisp. Drain the tortilla chips on paper towels to remove excess oil.
Step 2: Heat the Chili Sauce
In a large saucepan, heat the red chili sauce thoroughly over medium heat.
Step 3: Combine Tortillas with Sauce
Once the sauce is hot, add the crispy tortilla wedges to the saucepan, making sure they are fully coated with the sauce. Gently toss the tortillas in the sauce until they are well coated and slightly softened, but not too soggy.
Step 4: Serve and Garnish
Serve the chilaquiles on a large plate or individual plates. (Add Protein) Garnish with chopped onion, shredded lettuce, chopped tomatoes, and green onions. Add a dollop of sour cream, sprinkle Cotija Cheese, and a spoonful of salsa on top.
