1/2 cup chopped shallot1/2 cup of holy leaf, chopped2 holy leaves, hand-drawn8 cloves garlic, picados8 sprigs of marjoram, fresh8 sprigs of thyme, fresh10 fresh serrano peppers, open10 arbol chiles2 guajillo chiles2 pasilla chiles4 sugar spoons1 tablespoon white peppercorns3 cups red wine vinegar3 cups white wine vinegar
Directions
In a glass jar, with a medium mouth and lid, combine all the ingredients and let marinate for 2 weeks.
