Ancho whole chile pods mild - Chili Pods

Ancho (which means "wide" in Spanish) is pronounced [AHN-choh]. They are the broad, flat, heart-shaped, brownish-black wrinkled, dried version of the Poblano peppers. The Anchos are significantly hotter and more flavorful than the less ripe, green poblano. Ancho chilese ranges in flavor going from mild to zesty. They are mostly used in Mexico as they originate from the Puebla Region, and Central Valley of Mexico. Ancho chiles are sometimes mislabeled as pasillas which you can use to substitute them. The Ancho Chiles are used in mole, red chili and tamales.

Tips:

In order for the Ancho chiles to last for up to a year, store in airtight container or freezer. To use in most recipes, before using make sure to soak the chiles in hot water for 30 minutes to hydrate.

El Chile Ancho es la version seca, ancha, plata, en forma de Corazon, de color negro pardusco de los chiles poblanos y son singificativamente mas picosos y mas sabrosos que los menos maduros, poblanos verdes. El sabor del Chile Ancho varia entre leve a picante. Son mayormente usados en Mexico, ya que son originarios de la Region de Puebla y el Valle Central de Mexico. Los Chiles Ancho a veces son mal etiquetados como Chile Pasilla, que se puede utilizar para sustituirlos. El Chile Ancho es parte de la "Santisima Trinidad" de los Chiles usados en el mole y son un elemento basico en el chili rojo y en los tamales.

Tips:

Para que los chiles Anchos tengan una duracion de hasta un ano, guarde en un recipiente hermetico o en el congelador. Antes de usarlo en sus recetas favoritas, asegurese de remojar los chiles en agua caliente por 30 minutos para que se hidraten.

Anchos are a staple in my house, for Pozole, Caldos, etc. I can't find them in markets where I live.

I remove the seeds and stems and cook them in a small amount of water until just softened then puree them water and all in a blender. After it cools a little put into a in a zip-lock baggie and lay it flat in the freezer then it's an easy matter to open the bag a break off a piece to use in whatever.

My mom uses ancho dried chile pepper for multitudes of cooking dishes. One of my absolute favorites is when she makes tamales for christmas. It is a must to use ancho chiles for tamales, it gives it a delicious flavor and makes them super tasty.
