The ancient Aztecs called it achiotl, and it was used for Mexican manuscript painting in the sixteenth century. It can be used to season chicken, fish and pork. It is used frequently in the coloring of cheeses like Cheddar, Red Leicester and Gloucester, cheese products and dairy spreads. Achiote is a plant used as a condiment because it doesn't have flavor, it only colors red. Achiote is a seasoning used to make Tamale masa o give soups their color. Annatto can also be used to color a number of non-dairy foods like custard powder, rice, seasonings, processed potatoes, baked goods, breakfast cereals, smoked fish and many snack foods. Achiote dye is prepared by grinding seeds or simmering the seeds in water or oil. Annato is one of the main ingredients in a typical dish from Yucatan, Mexico called Cochinita Pibil.

El achiote es una semilla de color rojo intenso que se mezcla con varias especias formando una pasta. Se puede usar para condimentar aves, pescados y carne de cerdo. Se usa frecuentemente en la coloracion de quesos como el Cheddar, Red Leicester y Gloucester, productos de queso y pastas lacteas para untar. El achiote es una planta que se usa como condimento, pero no tiene sabor, solo da color rojo. Annato es un tipo de especia que se usa para hacer la masa de los tamales o para darle color a las sopas, arroz, pescado ahumado, condimentos, productos horneados, papas procesadas, y muchas botanas. El Colorante de achiote se prepara moliendo o cociendo a fuego lento las semillas en agua o aceite. El Annato es uno de los ingredientes mas importantes de la Chochinita Pibil, platillo de tipico de Yucatan, Mexico.

these are great for adding that authentic cochinita pibil flavor. I find the pre-ground mixes can be a Little bland/salty. This package is enough for about a 3-4 lb piece of meat. Be advised though that you'll probably want to use an electric coffee/spice grinder on these seeds as they're very hard and can be gritty if not ground fine enough.
