Shrimp with Chayotes Mexican recipe

Ingredients

750 grs. fresh shrimps, plucked1 Kg. tomatoes and cascabel peppers3 chayotes grandes3 cups water1 onion, medium size1 garlic clove3 tablespoons vegetal oil1 epazote sprigsalt

Directions

1. Put the cascabel peppers on hot oil, then strain them with the tomato (plucked and without seeds), the onion and the garlic.Fry the strained mixture and add water to it. Add the fresh chayotes (plucked and sliced or cutted on squared), and the epazote sprig, finally season with salt.As soon as the chayotes are done, add the shrimps as well as water if necessary. The sauce must be thick.

Chayote (Sechium edule) is an edible plant belonging to the gourd family Cucurbitaceae, along with melons, cucumbers and squash.
